Napoleon puff pastry with cream and berries

Light custard, berries and crispy puff pastry. The Napoleon cake is a portioned alternative to the popular delicacy of the same name. By their structure and taste, cakes are in no way inferior to a whole cake, and it's a pleasure to cook them. I was making puff pastry cakes with custard.

    For the base, we will need 750 g of puff pastry in plates. It needs to be thawed beforehand.

    Cut each plate of dough in half into identical rectangles.

    Put the dough on a baking sheet and cover with parchment sheets. Put some kind of load on top so that the dough does not rise much when baking. I put the pans in the dough one on top of the other, and they serve as cargo.

    Bake cakes in preheated to 200°In the oven for about 20 minutes. Ready-made cakes to cool.

    Cut each cake into 2 parts to make squares. My dough rose slightly and flaked, so I cut the squares also lengthwise into two thinner halves.

    Crumble one square into a separate bowl.

    Cream. To prepare the cream, we will need: 250 ml of milk; 50 g of sugar; 4 eggs; 2 tbsp starch; 1 tsp vanilla sugar.

    Pour sugar, vanilla sugar and starch into a saucepan. Break the eggs.

    Rub everything thoroughly until the sugar is completely dissolved.

    Pour in the milk and stir until smooth.

    Put a saucepan on medium heat and, stirring constantly, bring to a boil.

    As soon as the cream boils, turn down the heat and cook, stirring, until thickened. The cream should be as thick as possible.

    Remove the finished cream from the heat, cover with cling film "in contact" and cool.

    Filling. For the filling we will need: 100 g of grapes; 100 g of blueberries.

    Wash and dry the berries. The grapes are torn from the twigs and cut in half. It is better to take seedless grapes, for example, the kish-mish variety.

    Spread a square of dough with cream, sprinkle berries on top. Repeat the layers 1-2 more times.

    Grease the last cake with cream, sprinkle with crumbs.

    Decorate cakes with grapes, blueberries and mint and serve. Enjoy your meal!
