Cooking method

Cooking time: 3 h 20 min

1. Prepare the dough:

- heat the milk to a temperature of 40 degrees,

- add sugar and yeast to the milk,

- pour flour,

- mix everything and put it in a warm place for half an hour.

2. We begin to prepare the dough:

- put butter at room temperature in a bowl,

- breaking an egg,

- pour sugar,

- mix everything (without fanaticism - you don't need to beat),

- combine the muffin with sourdough,

- sift the flour and add portions to the future dough, stir,

- spread the dough on the table and knead, greasing your hands with vegetable oil, until the dough will not stop sticking to your hands.

The dough should turn out soft and obedient. You may need a little more or a little less flour (depending on its quality). We form a ball from the dough, put it on the bottom of a deep container, cover it with a towel and put it in a dark place for one hour. When the time has passed, we knead the dough and knead it again (do not put flour).

3. Now we form buns:

- divide the dough into eight parts (this is if the large buns are as in the photo, for medium-sized buns we divide the dough into 16 parts),

- from each piece of dough we form a bun,

- roll out the buns into tortillas,

- lubricate the surface of the tortillas with vegetable oil,

- sprinkle sugar and cinnamon on top of the tortillas,

- roll each tortilla into a roll, then fold in half, connecting the ends, make a cut at the bend and turn it out - a bun with a heart turned out.

4. The final stage:

- cover the baking sheet with baking paper,

- lay out the blanks,

- leave them to come up for 15 minutes,

- lubricate the surface of the buns with yolk,

- put the baking sheet in a preheated oven for 15-25 minutes (until ruddy). The oven temperature is 180 degrees Celsius.

5. We serve buns for tea and enjoy! :)
