Sour cream cookies are simple in a hurry

Quick and simple cookies come from childhood. Just can't come off! In my family, such hasty cookies are sweetly called crumpets :) These cookies are prepared literally in a matter of minutes, and the taste cannot be described in words. This is the very taste of a carefree childhood and cozy country tea parties on warm summer evenings.

    How to bake delicious simple cookies in a hurry? Add sour cream to a deep bowl. Pour all the sugar in there. The fatter and thicker the sour cream is, the tastier the cookies will turn out. But in this case, you will have to adjust the amount of flour in a smaller direction - that's for sure. I have sour cream with 10% fat content.

    Whisk sour cream with sugar with a mixer for just a minute until light bubbles form.

    Add baking soda. Divide the entire volume of premium wheat flour into about two parts and sift the first half into the dough.

    Knead the dough and check the consistency. If it is runny and very sticky, like mine, then we add flour further.

    Knead the dough again and evaluate its structure again. It should just stop being strong! stick to the hands. As soon as this happens, it means the dough is ready.

    It took me exactly 2.5 standard faceted cups of flour.

    Roll out the dough into a circle five millimeters high. And squeeze out the cookies with special molds or an ordinary glass. I have rare cookie cutters, still Soviet-made :) It is better to roll out the dough on a special silicone baking mat so that the cookies are easier to remove after squeezing. Or you can lubricate the work surface with a small amount of sunflower oil.

    Spread the blanks on a baking sheet with low sides, covered with non-stick parchment paper. Bake cookies in a preheated 180 degree oven for ten to twelve minutes. The baking time may vary, focus on your oven.

It is important not to overdo this cookie in the oven. Let it be better to be pale, but elastic-soft inside, than to become ruddy, but hard as a biscuit. And this will happen quite quickly if you do not follow the preparation of cookies.

These are exactly the fragrant crumpets, with a unique sour cream flavor, that I remember from my childhood.
