Baked duck with apples in the sleeve

Fragrant, tender, with a crust - it's very tasty! Duck baked with apples is a classic of the festive table. One of my favorite dishes. And cooking it up your sleeve is a real pleasure! Apples are better to take sour, green varieties, they make the duck juicy and set off the taste of duck meat well.

Step-by-step cooking

Cooking time: 2 h 30 min
  1. Step 1:

    Step 1.

How to bake a duck with apples in the sleeve? Prepare the ingredients. It is best to complement the duck with sour apples (if you like, apples can be replaced with quince, it will also give the necessary sourness). Wash the duck carcass thoroughly and dry it.

  2. Step 2:

    Step 2.

In a bowl, pour salt, ground pepper, ground bay leaf. Everything is to your taste, you can not add something at all or add and supplement on your own, but the main thing is to keep the balance - do not overdo it! Mayonnaise and apples will also give their taste to the duck.

  3. Step 3:

    Step 3.

Rub the duck well with spices inside and out. Refrigerate for a couple of hours. If you want, add pieces of garlic under the skin, making incisions. I prefer duck without garlic.

  4. Step 4:

    Step 4.

Before you take the duck out of the refrigerator, turn the oven on 180 degrees so that it has time to heat up, cut the apples into quarters, removing the core. Lemon should not be sprinkled, they are already sour, their taste is enough for a duck.

  5. Step 5:

    Step 5.

After taking the carcass out of the refrigerator, rub it well with mayonnaise.

  6. Step 6:

    Step 6.

    Stuff the duck with apples.

  7. Step 7:

    Step 7.

If you want, you can sew up the duck and fix it with toothpicks. I packed the apples tightly, they sat there tightly, so I did not sew them up.

  8. Step 8:

    Step 8.

Carefully put the carcass in the baking sleeve. Tightly tie the ends on both sides. Attention! The sleeve should be like this - holes for steam to escape from above, this allows the duck to cook evenly, and the sleeve will not "swell". We put it in our preheated oven. The time is approximately 2 hours. At the rate of 40 minutes-1 hour per 1 kg of poultry. But still look and focus on your ovens.

  9. Step 9:

    Step 9.

5-7 minutes before the end of cooking, you can tear the sleeve from the top along the seam, just do it in cooking gloves and carefully so as not to get scalded! And put it back in the oven for 5 minutes. This is so that there is an appetizing crust.

  10. Step 10:

    Step 10.

Put the finished duck on a dish, decorate at your discretion. The apples inside became soft, but they fulfilled their mission - they made the duck meat soft and juicy, tender and fragrant. Treat your beloved household and guests) Enjoy your meal!

So that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).

Keep in mind that everyone has different ovens. The temperature and cooking time may differ from those specified in the recipe. To make any baked dish successful, use useful information about the features of ovens !

Note that the quality and taste of the finished dish largely depends on the proper defrosting of the ingredients. How to avoid mistakes and choose the best way, read the article about defrosting.
