1. Three hard cheese on a coarse grater, put in a bowl.

4. Salt, pour in half of the lemon juice and mix everything.

5.We remove the insides and spine from the fish (to do this, we make an incision on the back of the fish, and cut the spine into two parts). We wash the fish, lightly dry it with a paper towel, sprinkle with salt, spices, pour the remaining lemon juice.

6. Cut the onion thinly into circles.
