    Ingredients you will need: Butter with a fat content of 82%, cold. Almond and wheat flour. Salt, sugar. If the eggs are large, you can just yolk. Orange peel - optional.

    Combine flour, salt, sugar and cold butter.

    I grind my hands into crumbs. You can use a blender in a bowl with knives.

    I add the zest (only the bright part, the white part will be bitter) and eggs (or rather the floor) and quickly knead the dough.

    It should turn out plastic, homogeneous, not sticky.

    Between two sheets of parchment or Teflon mats, roll out the dough to a thickness of 5 mm and to the desired size.

    The size of my form is 21 cm in diameter, height 3. I put the dough in the refrigerator for 1 hour to rest and cool down.

    Then I put the cooled dough into a mold, level it and put it in the refrigerator while the filling is being prepared.

    I collect the trimmings in a lump, wrapping them in a bag and putting them in the freezer.

    For the filling, I will use raspberries and cherries in equal proportions, but you can take absolutely any berries (cherries, cherries, raspberries, blueberries, currants, blueberries ...) both frozen and fresh. If frozen, as in my cases, I throw it on a sieve to drain the juice. Also corn starch, sugar. Spices - optional. I have: cinnamon, nutmeg, ginger.

    I spread it on the cooled dough, level it.

    I rub a frozen lump of dough on top on a coarse grater. I send it to a preheated oven to 170 degrees for 40-45 minutes.

    But it's better to focus on your oven and on a beautiful, golden crust. I let it cool completely, take it out of the mold.
