It is enough to approach the dough once and you can cook both buns and pies, you can use any filling! If you put less sugar in the dough, you can make buns with unsweetened filling. A serving of 12 buns.

1. Pour yeast into warm kefir, mix and set aside for 10 minutes.
2. Pour part of the flour into a container for kneading the dough, add sugar, vanillin, salt. Mix and make a recess.
3. Pour the melted butter (not hot) and vegetable oil into the flour, beat in the egg and pour in the kefir (during this time the yeast has become active).
4. Knead the dough. In the process of kneading, add flour. This dough should not be dense, it should be runny and stick to your hands. For the convenience of working with the dough, it is better to lubricate your hands with vegetable oil. Knead the dough in a container for five minutes, then put it on the work surface and, beating, knead for another ten minutes. The dough will become elastic during this time, but it will still stick to your hands, this is normal.
5. Put the dough in a greased container, cover with a film and put it in a warm place for 1.5 hours.
6. Grind the cinnamon in a blender (if in sticks).
7. Peel and cut the apples into small cubes.
8. Put the apples in a preheated frying pan, add sugar and cinnamon to us, simmer for a couple of minutes, so that the apples become a little softer. Allow the filling to cool.
9. Divide the dough that has come up into 12 parts, round each piece and leave it under the film for 10 minutes, so that the dough will rest.
10. Make a tortilla from each piece, put the filling in the middle, gather the edges to the center and put the formed bun on a baking sheet (preferably in some form, so that the buns hold the shape) on a silicone mat, I bake buns in a pastry ring, I made a diameter of 28 cm .
11. Cover the buns with a towel and leave for 20-30 minutes, then cover with yolk (dilute the yolk with water or milk).
12. Bake at 180 degrees for about 30 minutes.
