This cupcake is a good solution when you need to recycle proteins. Periodically, I accumulate egg whites. It's good that they can be stored in the refrigerator for a long time, and even longer in the freezer. Therefore, when 3-5 pieces accumulate, I cook something where only proteins need to be used. I usually bake cookies. This time I wanted something more significant. This cupcake, according to the recipe of the famous pie expert Chadeika, turned out to be the most airy of all that I have ever cooked. It somewhat resembles a baked souffle.

    Remove the cupcake form from the oven, turn it over and put it on the grill. At the same time, the cupcake itself should not touch the lattice, only the edges of the mold. If the cupcake rises above the surface of the mold, then cool it not on the grill, but on two glasses, on which only the edges of the mold will rest. Cool the cupcake.
