1. Oatmeal cookies are crushed into crumbs. It is better to do this with a blender. The crumb should not be large.

2. We put the oatmeal crumbs in a bowl, here we also pour instant oatmeal, flour with baking powder, cinnamon and salt.

3. In a separate container, break the eggs, add coconut oil and vanilla extract to them. Whisk the ingredients into a fluffy foam.

4. Pour maple syrup into the resulting mass, mix until completely homogeneous. Then pour into the mixture of dry ingredients, mix.

5. Peel the carrots, wash them. After that, we rub the prepared carrots on a grater and put them into the dough. The dough turns out to be quite moist, not crumbly.

6. Distribute the dough evenly over the bottom of the baking dish. The form is pre-lined with parchment.

7. We send the form to the oven preheated to 190 degrees, bake the cake for 17-20 minutes.

8. We are not in a hurry to remove the finished cake from the mold. First we cool it, only after that we extract it.

9. Prepare the cream for decoration. Put the cottage cheese in a deep bowl, punch it with an immersion blender. The main task is to achieve a homogeneous mass of a pasty consistency.

10. To the cottage cheese, add classic Greek yogurt and powdered sugar. Beat the ingredients with an electric mixer at low speed for 2 minutes.

11. We put the resulting cream in a suitable container, cover it with a lid and send it to the refrigerator for 2 hours.

12. At this time, the oatmeal and carrot cake should also be in the refrigerator.

13. After the specified time, we transfer the cream to the cooking bag, decorate the cake with it. We cut the cake into portions and serve it on the table.
