Cooking method

Combine milk with water, heat a little on the fire, add yeast, sugar and 1 tablespoon of flour. Stir all this with a whisk and leave for 10 minutes.

After waiting for the prescribed time, put the yolks, softened butter in a bowl, pour salt, mix. In the same bowl, sift the flour, knead the dough. The dough should be elastic, soft, should not stick to your hands. Cover the finished dough with a cloth napkin and leave it for a while so that it fits (increased 2-3 times).

Divide the dough into balls, roll out a 16 cm diameter cake from each of them, transfer the cakes to a baking sheet lined with parchment. Now we cover the shangi with sour cream (no need to make depressions!), without topping up to the edge of about 1 cm.

Sprinkle the shangi with a little sugar and send it to the oven, preheated to 220 degrees for 30-40 minutes. About 5-10 minutes before readiness, we take out the shang and lubricate them with yolk and melted butter, after which we return to the original position and bring them to full readiness.

Serve the pastries on the table, pour the milk and start eating.
