Pour the sifted flour into a deep bowl, add sugar, vanilla powder and scatter the chopped pieces of butter. Then chop them with a fork to crumbs. Beat the eggs with a fork and add to the flour, mix. Add the quenched soda, which we extinguish with 1 tbsp.l. vinegar. Mix and quickly knead the dough. Roll out the dough in a layer about 1 cm thick, and cut out small circles about 10-12 cm in diameter. We spread our circles on a baking sheet with a high side. Pre-cover the baking sheet with baking paper. In the middle of the circles we make depressions. After that, we make the filling. We separate one yolk from the protein. Add the protein to the rest of the eggs and whisk with sugar until the egg mass increases three times in volume. The cottage cheese is rubbed through a sieve and mixed with semolina, vanilla sugar and lemon juice. Then we put the beaten eggs into this mass, mix carefully. Peel and core the apples, cut into small cubes, wash the raisins and divide each raisin in half. Then fill the recess in the circles with the filling. Bake for 30 minutes in a preheated oven.
