Preheat the oven to 120 degrees.
Cover the baking sheet with parchment paper. Lay out the slices of bread and bake until crispy. Remove from the oven and immediately put ham and cheese on each piece of bread. Put the pan back in the oven and bake until the cheese melts.
Meanwhile, in a small saucepan over medium heat, melt the butter. Put the fox sage and cook for about 5 minutes. Remove from heat and season to taste with salt and pepper.
Remove the baked bread from the oven and transfer to a platter. Pour oil on top and serve immediately.
