Chuvash Huplu

Delicious Chuvash pastries will be enjoyed by the whole family! Huplu is a tall closed pie with salty filling, made from yeast dough. Meat can be minced with a meat grinder into minced meat, or cut into pieces. The first option will bake faster, and if the meat is cut into pieces, it will take more time and the pie will need to be covered with foil so that the surface does not burn.

We heat the milk a little in the microwave, pour it into a bowl, pour yeast, sugar and salt, mix, leave it warm for 10-15 minutes until the foam cap appears. Then we break the eggs into the resulting mass, sift the flour, knead the dough. The dough is soft, does not stick to the hands, we leave it under the cling film for an hour while we do the filling.

Pork is washed, crushed with a meat grinder. Potatoes are cleaned, washed, cut into small cubes. Peel the onion, also cut into cubes. We combine all the components, salt and pepper, mix.

We knead the dough, divide it into two parts: a larger and a smaller one. We roll out most of it, put it in a form pre-greased with vegetable oil, fill it with stuffing. Now we roll out the smaller part, cover the pie with it, pinch the edges. From the scraps of dough we make decorations (optional), lubricate the surface with egg yolk.

We send the mold to the oven preheated to 180 degrees and bake for 50 - 60 minutes, depending on the type of oven. Sprinkle the finished cake with water and cover with a towel, leave for 15 minutes.
