Coconut has 10 times more fiber than regular flour, and it is not inferior to it in terms of protein content. Useful fatty lauric acid, which is contained in the chips, also has an antibacterial effect. When baking, it is worth considering the high hygroscopicity of coconut – in accordance with its properties, it will absorb much more liquid than the flour we are familiar with.
If the chips seem to you a rough base for cookies, it can be passed through a coffee grinder and ground into flour, but then the amount of coconut will need more than specified in the recipe – vary based on the consistency of the dough. But according to my personal feelings, this should not be done.
The cooking process is extremely simple and fast:
Whisk the whites to a foam. Sugar (sweetener I have Milford 7 crushed tablets, but you can have less) is mixed with coconut chips, add vanillin (you can not put it, to taste). Gradually, stirring, we introduce the mixture into the proteins.
We cover the baking sheet with parchment or a silicone mat and with the help of two tablespoons we spread our coconuts in small pyramids.
We send it for 15-20 minutes in the oven, preheated to a temperature of 160 degrees. After 10, start checking the cookies for readiness, so as not to over-dry. And now our delicacy is ready with benefits for the figure, unless of course you replace sugar with a sweetener. Who is on a diet or adheres to proper nutrition, I think they will understand me.
