Cotton cheesecake in a slow cooker

A delicacy of Japanese cuisine - amazing taste! Cotton cheesecake is incredibly delicate in texture, lush, light, moderately moist and fragrant. Such a delicacy does not need impregnation or cream - it is self-sufficient and original. Are we trying?

Cooking method

Cooking time: 6 h 10 min

Separate the whites and yolks. Beat the proteins with sugar (of both types) to stable peaks.

Beat cream cheese and butter to a creamy consistency. Then we introduce the yolks one by one, whisk. Pour in half the milk, add lemon juice, beat until smooth.

Combine flour with starch and mix it very carefully into the creamy mass. Here we also add the remaining milk and whipped whites.

Preparing the form. To do this, choose a silicone baking dish with the highest possible side (since the cotton cheesecake rises strongly during the baking process) and pour the dough into it.

Pour water into the bowl of the slow cooker and gently lower the silicone mold with the dough into it. Bake the cheesecake for 30 minutes, after which we do not hurry to get it - we leave it in the slow cooker for another 60 minutes, while not opening the lid!

After the specified time, we take the cheesecake out of the mold and send it to the refrigerator for at least 4 hours. During this time, it should reach the desired consistency.

Serve a treat on the table, garnished with fresh berries!
