1. Peel the onion, cut into circles 1.5-2 cm thick. After that, divide the circles into rings - we will need only large rings, set aside very small ones for the cream sauce.
2. Cut the mozzarella into strips also 1.5-2 cm thick.
3. Collecting rings: take a large onion ring, insert a couple of pieces of mozzarella into it in a circle, put a smaller onion ring inside, but so that you get a thick puff ring of onions and cheese inside.
4. Put the rings in the freezer for 1 hour. This is necessary so that they do not crumble when frying.

At this time, prepare the cream sauce:

5. Chop the remaining onion finely. Preheat the frying pan, put the butter, the prepared onion in it, simmer until transparent (but do not fry).
6. Grate cheese (mozzarella and parmesan).
7. In a saucepan, bring the cream to a boil, put the onion in them, add the grated cheese, mix.
8. Add salt, ground white pepper, grated nutmeg, paprika. Mix everything well, remove the sauce from the heat.

The final stage of cooking this hot snack:

9. Time has passed - take the rings out of the freezer, prepare the components of the batter: pour flour into a bowl, breadcrumbs into a separate one, eggs into a third, beat them.
10. Dip the rings in flour, then in eggs, then again in flour, again in eggs. Then roll the rings in breadcrumbs. Lay out the blanks of the future snack on the cutting board.
11. Heat vegetable oil in a frying pan. Put several rings in it and fry until golden brown. Put the finished rings on a paper towel so that excess fat is absorbed into it.
