First we choose currants, we will need ripe, large and undamaged berries. The first and most important rule when freezing currants is not to wash them before freezing! When washing, the berries deform due to the fact that they gain excess fluid.
We take one kilo of black currant, get rid of leaves and damaged berries, but we do not remove twigs and tails! We put the peeled berries on a tray and put them in the freezer. It should maintain a temperature of 12 to 19 degrees. We leave the berries for 24 hours.
In the same way, you can freeze red currants in the same way, there is absolutely no difference.
