Pickle the red-eye - it will turn out very tasty! Cooking is easy! I really love fish and seafood and I try to cook something new from them all the time. Once my colleague treated me to a delicious salty fish - red-eyed. The fish turned out to be fat like mackerel, with red and dense, but at the same time tender meat. If you cut the red-eye, you can see that immediately under the skin it has a layer of white fat - it is rich in the most useful Omega-3 fatty acids.

The red-eye is salted extremely simply. First you need to prepare the fish. If required, defrost: the defrosting process should be natural, since when defrosting in water or microwave, the taste qualities of fish deteriorate. Then peel, gut, cut into large portions.

So, let's go directly to salting red eyes:

1. Bay leaf, peppers, cloves and allspice are ground in a mortar.
2. Pour the spices into a small cup, add sugar and salt, mix.
3. We put the fish with their backs down in a suitable container.
4. Pour the mixture of salt, sugar and spices with cold water, stir well.
5. Now you need to pour this brine over the fish, put a small load on top so that the fish is not pressed too hard - only slightly.
6. We put the fish to salt in the refrigerator for three days.

Ready-made fish will be a great snack for beer. Serve it in large quantities!
