Of course, all vegetables must be washed and cleaned. Next, chop the cabbage, three carrots on a coarse grater, cut the sweet pepper into thin strips and the green onion into strips up to 3-4 cm. if you got large tomatoes, you need to cut them, but it's better to take small tomatoes, for example cherry tomatoes, it's more interesting and tastier. Add salt and mix everything well. We put the vegetables in enameled dishes, put the oppression on top. In this state, we leave the cabbage with vegetables in the heat at room temperature for a week. Periodically monitoring the fermentation process, pierce the mixture with a wooden stick in several places. When the cabbage and vegetables are salted, put the cabbage in a cold place. Lowering the temperature regime will stop the fermentation process and will not allow the vegetables to peroxide. there it will remain in winter for a long time.
