    How to make a Nezhinsky salad from cucumbers for the winter? Prepare the products. Wash the cucumbers thoroughly. It is preferable to take small-sized cucumbers - the salad will turn out more beautiful. Soak cucumbers overnight in cold water to make them crisper.

    After soaking, wash the cucumbers again under running water and chop them into thin half rings. Peel the onion and chop it into thin rings.

    Wash and shake fresh dill from the water. Finely chop.

    All chopped vegetables: cucumbers, onions and dill - mix in a suitable sized bowl. In fact, our cucumber salad is ready.

    Wash the glass jars thoroughly, preferably with soda. Rinse it off. Boil the metal lids for 10 minutes. Wash the plastic ones and pour boiling water over them. In each jar, send a couple of peas of black pepper.

    Fill glass jars with salad, tamping it very tightly with a spoon.

    Pour salt and sugar into each jar. Pour in the vinegar.

    Pour the contents of the cans with boiling water up to the shoulders.

    Cover the jars with previously treated lids and leave for 20 minutes. Then put the jars in the oven, preheated to 100 degrees. After 5 minutes, increase the oven temperature to 120 degrees and sterilize the jars for about 10 more minutes. After the sterilization is finished, open the oven door slightly and let the salad cool down. Then take out the jars and screw them with lids, adding boiling water to the very top if necessary.

Cucumbers in this salad turn out to be as crispy as possible, completely soaked in fragrant and marinade. This is achieved by pre-soaking cucumbers and subsequent sterilization.
I cooked such a salad without sterilization. In this case, the cucumber mass is first boiled in a saucepan. So there is less hassle, and the salad is prepared faster.
But it is the recipe with sterilization that makes the Nezhinsky salad sound crispy.
The snack can be stored all winter both at room temperature, and in the basement, and in the refrigerator. It is very resistant due to vinegar and sterilization.
Nezhinsky salad is especially good in chilled form with boiled potatoes and black Borodino bread. And, of course, with a glass of strong alcoholic drink.
