Step-by-step cooking

  1. Step 1:

    Step 1.

How to make tomatoes lick your fingers without sterilization for the winter? Prepare all the necessary products. Tomatoes of small size and elongated shape - plum-shaped are suitable for pickling and pickling. Choose ripe tomatoes of uniform color without damage, preferably ground. I got 3 cans of blanks: one liter and two 0.75 liters each. For each of the three cans there is 1 teaspoon of vinegar. For a 2-liter - 2 spoons, for a 3-liter - 3 spoons.

  2. Step 2:

    Step 2.

Sterilize the jars in any convenient way. I have small cans, so I pour some water into them and put them in the microwave for 5-7 minutes. But you can sterilize the jars in the oven at 100 degrees for about 10-15 minutes. Or put a spoon in each jar (so that the jar does not burst), pour boiling water and leave for 5 minutes, then drain the water. Boil the lids for 5-7 minutes.

  3. Step 3:

    Step 3.

In each jar, put a half - or a leaf of bay leaf, a couple of peas of allspice. Of course, you can add some other seasonings and spices: someone likes to put clove buds, someone dill umbrellas or tarragon. But this recipe is good because very tasty tomatoes are obtained with a minimum amount of spices and seasonings

  4. Step 4:

    Step 4.

Wash tomatoes well, dry them. If you have tomatoes with twigs, you can leave them.

  5. Step 5:

    Step 5.

Prick each tomato 3-4 times with a toothpick in the area of the stalk. This must be done so that the skin of tomatoes does not burst when we pour boiling water over them.

  6. Step 6:

    Step 6.

Place the tomatoes tightly in the jar. To fit more tomatoes, tap the jar several times on a towel folded several times on the table.

  7. Step 7:

    Step 7.

Boil the water and pour over the tomatoes.

  8. Step 8:

    Step 8.

Cover and let stand for 7-10 minutes.

  9. Step 9:

    Step 9.

Then drain the water. Add salt and sugar at the rate of 1 liter of water, 2 tablespoons of salt and sugar.

  10. Step 10:

    Step 10.

Put the marinade on the fire and bring to a boil.

  11. Step 11:

    Step 11.

While the marinade is boiling, add the chopped garlic to the jar. It should be very small and create an illusion of snowflakes in the jar. I put the garlic through the press, but you can grate it or chop it with a knife.

  12. Step 12:

    Step 12.

There should be a lot of garlic.

  13. Step 13:

    Step 13.

    Pour boiling marinade over tomatoes.

  14. Step 14:

    Step 14.

And pour vinegar directly into the jars. Vinegar 6-9%. If you have an essence, dilute it to the state of vinegar in a ratio of 1:10. Close the jars with screw lids or roll them up.

  15. Step 15:

    Step 15.

Turn the jars over and leave them to cool completely. Sterilization is not required.

  16. Step 16:

    Step 16.

Such tomatoes are perfectly stored in ordinary apartment conditions without a refrigerator. Enjoy your meal!

Remember that spices such as salt, sugar, as well as vinegar and its substitutes are used in recipes for winter preparations not only for taste, but primarily as preservatives. Therefore, in no case should you reduce the concentration of salt and sugar, and also replace vinegar (essence) with a weaker concentration than indicated in the recipe, otherwise vinegar (salt / sugar) will not show their preservative properties and the workpiece will be spoiled.
