We start by getting rid of the lemon peel. It will be easier for you to work with a small knife for cutting greens. We try to cut off as little of the white part of the peel as possible together with the lemon zest.

Put the currants in a blender, together with sugar and lemon zest. Pour boiling water, up to 200 grams, beat well, and top up the volume missing to a full liter, along with the squeezed juice of a peeled lemon. Whisk again and pass the mixture through a sieve or a fairly fine-grained colander. Let the juice cool down. Your labors will respond to you with interest!
