So, our caramel is on fire. We give it a good boil and pour the circles on a silicone mat or foil. Be very careful - caramel has a temperature above 160 degrees. Quickly pour and insert the sticks. We do this, as if screwing them into caramel. It's good if you have an assistant, because caramel hardens very quickly. We leave our lollipops to dry for 5-7 minutes and carefully remove.
