Pour water at room temperature into a deep dish and salt to taste. Stir until the crystals dissolve. Sift the flour through a fine sieve 1-2 times. Add to the liquid in parts. As soon as the lump begins to form, we put it on the table, sprinkled with flour. We continue to knead for at least 10-15 minutes, adding flour if necessary. The dough should be steep and homogeneous in consistency. We cover the plate with the dough with a film and let it rest for about half an hour. Then you can start rolling it out.
