1. Peel the berries from the litter, rinse, wait for the water to drain.

2. Mix the currants with sugar and spread the resulting mass into pre-prepared jars. Cans can be taken in any capacity – 0.5, 1 or 2 liters.

3. Put jars of berries and sugar in a cold place overnight.

4. In the morning, add more currants mixed with sugar to the jars.

5. Jars with berry-sugar mixture should be pasteurized at a temperature of 80 degrees: liter for half an hour, two–liter - forty minutes. The pasteurization time for 0.5 L cans is 20 minutes.

6. Remove the jars from the water, roll up and leave to cool, after which they need to be stored in a cold place.

For those who will do pasteurization for the first time, the details of the process: water is collected into a large saucepan, into which jars filled with berries are immersed so that the water is a couple of centimeters below the neck. The pan is put on fire. Do not forget to cover the jars with lids on top, and also monitor the number of berries. As the currant is pasteurized, it will settle and you will need to add berries to the top of the jar.
