Drying mushrooms in the oven

The fastest way to dry mushrooms. Evaluate the result! If you do not have such a kitchen device as an electric oven, then an oven will save you. We in our family have been drying mushrooms in the oven for a long time, it's fast, simple and convenient. If you dry them in the air, it takes more time. In addition, mushrooms can collect dust and dirt, which is unpleasant, at least for me. From a kilogram of fresh mushrooms we get 60-70 grams of dried.

We will need a grill for the oven. Mushrooms need to be cut so that they do not fall through the grate. Preheat the oven to 50-60C.
You can put a smaller one on top of the standard oven grill (buy extra), then the mushrooms can be chopped and finely. Boroviki, for example, I cut into plates, but I don't cut honey mushrooms at all. If you lay paper on a baking sheet, then you can install double drying: a grid on top, a baking sheet on the bottom.
The oven should be kept slightly ajar - so the evaporated moisture will come out. Depending on the mushrooms, it will take a little more or less time. Dry for 2-3 hours, then close the oven and dry for another 4-5 hours at 50C.
Mushrooms should not be kept and washed in water before drying! Try to clean them dry using a stiff brush. If your oven has a "vent heating" function, turn it on.
