Beshparmak of mutton is a national Kazakh food. According to a traditional culinary recipe, the dish is prepared from lamb, horse meat and beef. But for obvious reasons, not everyone can agree with such a composition. That's why I use only beef and lamb. Pieces of meat (cut up roughly like a barbecue) are lowered into cold water, brought to a boil, the fire is reduced. I salt, add a bay leaf, a whole onion and cook on low heat until tender.
The meat is cooked for a long time, at this time I knead the dough, let it stand for a while. Then we roll out and cut into thin squares with sides of 8 centimeters. By this time, the meat is most often ready, I take it out and put it aside, covering it with a lid. Next, I cut the onion into rings, the greens are not very small. I take a new saucepan, put onions with herbs, as well as salt, pepper, seasonings, pour broth, boil for a short time. Then I throw pieces of dough there, cook until ready. That's it, beshparmak is ready!
Serve on a platter, on which to put pieces of dough and pieces of meat on top. And don't forget, beshparmak is eaten with your hands :)
