Cooking method

1. Cut the bacon into thin strips and place it in a frying pan without oil. Fry the bacon strips on medium heat until golden brown on both sides and crispy consistency. Then transfer the fried bacon to a plate until completely cooled. After the bacon has cooled and become hard, crumble it into small pieces.

2. First peel the onion, rinse, wipe with a paper towel and then finely cut into cubes. In the frying pan where the bacon was, place the chopped onion and fry it for 3-4 minutes until golden brown. Set aside - you will need it a little later.

3. Peel potatoes, rinse and cut into small pieces. Put the potato pieces in a small saucepan and pour clean drinking water. Add salt and freshly ground black pepper. Put the pan on the fire, bring the water to a boil and cook the potatoes over low heat until soft and pureed.

4. Pour the chicken broth into another saucepan and also place it on the fire.

5. As soon as the potatoes are cooked, puree them with a blender, add cheddar cheese, cut into small pieces, and pour in 1 percent milk. Melt the cheese over low heat and mix with mashed potatoes and milk until smooth. Instead of cheddar cheese, you can use any other cheese at your discretion.

6. Put the resulting creamy potato mass into hot chicken broth and mix all the ingredients together thoroughly until a homogeneous consistency is obtained.

7. Continue to cook the soup over low heat. Taste the soup and, if necessary, add the missing spices. As soon as it starts to boil, remove the pan from the heat.

8. Pour the ready-made potato cream soup into serving plates. Top the soup with fried onions and pieces of crispy bacon. Put sour cream and sprinkle with fresh herbs.
