I offer you a recipe for making a traditional Scottish soup. The dish is a kind of mashed soup, the density of which is given by rice and mashed crab with milk. If you can't buy a whole crab, you can use 175 grams of frozen or canned crab meat to make soup. To begin with, let's get rid of the crab: I separate the brown and white crab meat. I break the claws and take out the meat from them, which I cut into pieces and put aside. Now I cook rice. To do this, I bring the milk and rice to a boil, and then cook in a saucepan with the lid closed for about 20 minutes. Then I add brown and white crab meat to the pan and cook for another 5 minutes. The contents of the pan are slightly cooled and crushed with a food processor or through a sieve until a homogeneous mass is obtained.
I pour the soup into a clean saucepan, add fish broth and crab meat from the claws to it. I put the pan on the fire and bring it to a boil. After that, you can add lemon juice and anchovy essence. I cook the soup for a few more minutes. Before serving, add parsley or thyme and a little sour cream to the crab soup in Scottish style.
