    How to pickle the blueberries for the winter? Prepare the ingredients. The main thing is, of course, mushrooms. They should be freshly harvested, strong and elastic. Of course, mushrooms should be checked whether they are wormy or not, but in my opinion, even if you find a wormy specimen, it's okay: soak such mushrooms in salt water and the worms will leave the mushroom. Vinegar use 9%, but the specified amount of ordinary table vinegar can be replaced with one spoonful of essence.

    Clean the mushrooms, remove the mycelium, if any, and dirt. Cut the mushrooms into medium-sized pieces.

    Put the mushrooms in a saucepan, pour clean water so that they float freely in it, add a little salt.

    Put on a small fire, bring to a boil and cook for 15 minutes, constantly removing the foam.

    Remove the mushrooms from the heat, put them in a colander and rinse under running water.

    Make the marinade in a separate saucepan. Pour in 1 liter of water.

    Add spices: allspice, cloves and bay leaf.

    Pour in the vinegar.

    Bring the marinade to a boil.

    Add the washed mushrooms to the boiling marinade and cook over low heat for 15 minutes.

    Add chopped garlic. I put the cloves through the press, but you can grate the garlic on a grater or just chop it with a sharp knife. Boil the mushrooms for another 5 minutes and remove from the heat.

    Fill the jars with mushrooms, top up with brine if necessary.

    Close the lids tightly or roll up with a typewriter. Turn the jars upside down with the lids, wrap them with something warm and leave to cool. Sterilization is not required in this case. Such a blank is perfectly stored in normal room conditions, without a refrigerator.

Remember that spices such as salt, sugar, as well as vinegar and its substitutes are used in recipes for winter preparations not only for taste, but primarily as preservatives. Therefore, in no case should you reduce the concentration of salt and sugar, and also replace vinegar (essence) with a weaker concentration than indicated in the recipe, otherwise vinegar (salt / sugar) will not show their preservative properties and the workpiece will be spoiled.
