Prepare the dough:

- pour kefir into a deep bowl, break the eggs, add butter and salt;

- pour sugar, soda (soda will be extinguished in kefir) and pre-sifted flour, knead the dough. The dough turns out elastic, elastic, does not stick to the hands.

Prepare the filling:

- boil the rice until ready;

- raisins and dried apricots (dried apricots can be cut into a couple of pieces) pour hot water, let it stand for 10 minutes, then drain the remaining liquid (you can drink it, it's useful);

- mix rice with dried fruits, add butter and sugar, mix.

Let's do the most interesting thing, namely, we will begin to form balishi:

- divide the dough into small parts (just like pies), roll out each part into a flat cake;

- spread the filling in the center, lift the edges to the top and gently pinch them with your fingers;

- using a silicone brush, we lubricate the surface of each balisha with egg white;

- bake the blanks in the oven, preheated to 180 degrees, for half an hour.
