Soup with minced meat and beans

Excellent bean soup with a dressing of minced meat and vegetables. The soup is very tasty, and despite the fact that it is cooked for a long time at the expense of beans, it is quite easy to cook it. To shorten the cooking time of the soup, you can take fresh young beans in season or use canned ones.

    To make the soup with beans and minced meat especially tasty, we take two types of meat – chicken fillet and beef. It is the meat from which we will prepare the minced meat ourselves. We will also need vegetables – onions, carrots, sweet peppers, tomatoes, greens. We'll take the beans dry, the soup from it turns out to be more satisfying. For frying, we use sunflower oil. And for the flavor – garlic, bay leaf and dill.

    Beans must be soaked in cold water for at least an hour. Then drain the water and rinse the beans.

    Fill the beans with water again and put them to cook. Cooking time is 2 hours on high heat from the moment of boiling. During this time, almost all the water will boil off. You can boil the beans in advance.

    While the beans are cooking, prepare the minced meat – twist the meat in a meat grinder, preferably twice.

    Vegetables are also prepared, washed and cleaned.

    While the water is boiling in the soup pot, cut the onion and sweet pepper into small cubes.

    Pour the chopped carrots into the boiling water first.

    After 5 minutes, put the bay leaf in the carrot pan.

    Put the minced meat in the sunflower oil heated in a frying pan and start frying on high heat, kneading and stirring so that it becomes crumbly. Fry the minced meat for 3 minutes.

    Then pour chopped onion and pepper, half a tablespoon of salt to the minced meat and continue to fry over medium heat, stirring, in an open frying pan.

    Meanwhile, cut the tomato into small cubes.

    After 10 minutes, add the tomato to the minced meat, mix and cook the minced meat with vegetables for another 10 minutes on medium heat.

    After the beans, we send minced meat with vegetables to the soup.

    Salt the soup, mix it.

    Cover the pot with a lid and let the soup boil over low heat for 5 minutes.

    Now chop the greens and garlic cloves with a knife.

    Add the herbs and garlic to the soup, mix and turn off the heat after a minute. Let the soup stand for another 5 minutes under the lid and serve it on the table.

    Delicious soup with minced meat and beans is poured on plates and served for lunch. This soup will be even tastier if you fill it with sour cream when serving.
