I cook this soup in a slow cooker (slow cooker). But it is also possible in a slow cooker on the "Quenching" mode or on an ordinary stove over low heat, only in this case the cooking time should be reduced.

Cut carrots and onions into cubes, send them to the slow cooker bowl. Add chopped celery, crushed garlic, tomato paste and tomatoes, as well as spices in the form of dried thyme. Salt, pepper, mix.

Add water (or broth) to achieve the desired consistency. Simmer for about 4 hours. After this time, add canned beans (you can replace them with beans) and spaghetti from durum wheat. We cut the spinach, send it to our soup. We continue to cook for another 45 minutes. Check the vegetables and spaghetti for readiness.

Serve minestrone soup, sprinkle it with grated parmesan and sprinkle with finely chopped herbs.
