Red bean lobio

Traditional Georgian dish with coriander notes! Translated from Georgian lobio means "beans". In Georgian cuisine, this name is given to dishes made from boiled beans, which have several dozen variations. They differ from each other in bean varieties, size, shape, color, degree of cooking and, most importantly, seasonings.

The beans are pre-washed and soaked overnight.
It should swell and increase in size.
Put the beans in a saucepan, pour cold water and put on fire.
Add the bay leaf and cook the beans until tender, then drain the water.
We cut the peeled onion into half rings and send it to the frying pan in preheated oil.
Stirring occasionally, pass the onion until golden brown.
Chop the greens.
Add herbs to the onion, and garlic squeezed through the press.
The cooked beans are slightly crushed with a pusher and transferred to the frying pan to the onion.
Add salt, coriander, black and red pepper, mix thoroughly and put on a small fire.
Languish under a closed lid for three minutes, then turn off the fire.
Lobio can be served as an independent dish, both hot and cold.
