This berry grows in swamps and tundra. It grows where there is nothing else. And, often, it is the only source of vitamins. And without vitamins, no food goes for the future. Man has mastered almost the entire space of the Earth, and everywhere he has learned to benefit from the local flora. Even if this flora is too poor. Therefore, there is a culinary recipe for cloudberry jam. Once there is a berry, there must be methods of processing it.
For jam, we choose the ripest and largest berries. Sprinkle them with lemon juice and let them stand for about half an hour. We take sugar at the rate of three hundred grams of sugar per 400 ml of syrup. Sugar is diluted with dry white wine. Stir until the sugar dissolves, put the prepared cloudberry in it and boil until ready. We put cloudberries in sterilized jars with a slotted spoon, and add the remaining sugar to the syrup. Cook it until bubbling. And then pour into jars on the finished cloudberry. We roll up the lids with a typewriter. But you can also use cans with screw-on lids.
We put the jars on the neck and wrap them in a blanket for slow cooling and continuing the process of infusing berries.
