Polish lunch is never complete without soup. I offer you a recipe for traditional Polish borscht. First we need to prepare beet kvass. It's very simple. We take half a kilo of fresh beetroot, peel it and cut it. Then we put it in a glass dish and pour 1 liter of water, add bread, you can get stale, cover the dishes with gauze on top and put it in a warm place to start fermentation. After a few days, we filter the resulting kvass. Now let's start cooking the broth. To do this, we cook meat, bones and dried mushrooms in 1 liter of water. When the broth is almost ready, add the onion, which must be pre-browned until golden brown, chopped carrots and spices. Separately, we cook the beetroot, peel it and grate it. Then add it to our broth and bring it to a boil. Rub the garlic clove with salt and put it in the soup for flavor. Then add kvass and boil. Borscht should be served, having previously filtered, so that only the broth remains. You can decorate with greenery. For this meal, instead of bread in Poland, it is customary to serve pie or ears with different fillings. In addition to meat, you can add different smoked meats to give the soup piquancy.
