I took this very tasty, fragrant culinary recipe for plum jam from my neighbor, and decided to cook it. And I cooked the jam in this way: part of the granulated sugar 800 grams must be dissolved in two glasses of water, brought to a boil, then hot syrup should be poured over the fruits of the plums, after which it is necessary to withstand four, five hours. Boil the plum with extracts, in several steps. The first cooking should be carried out very carefully so that the skin of the plums does not burst. If the plums are very tender, then they do not need to be brought to a boil, but kept for 5-7 minutes at a temperature of 90 degrees. After that, it is necessary to withstand about eight hours. After exposure, depending on the condition of the fruits, they must be boiled two or three times with exposure. Before the 2nd or 3rd cooking, add syrup made from the remains of granulated sugar and water. There is no need to withstand small plums, and cook them immediately after the first, second reception.
