What could be tastier on a hot summer day than an invigorating cold soup? If you are tired of okroshka, you should learn how to cook a wonderful Spanish dish, the culinary recipe of which I will now present to you. So, on the agenda we have gazpacho from vegetables and sweet peppers. Treat your faithful with such soup, and he will be grateful to you.
To begin with, we thoroughly wash all the vegetables and peel the cucumbers. With tomatoes, having thoroughly doused them with boiling water, remove the skin and – preferably – rid them of seeds. As a result, we should have only tomato pulp left. Cucumber and pepper (also peeled from seeds) are cut into neat cubes and divided into three piles. One pile is put aside, and the rest is put into a mixer together with tomatoes and carefully crushed, turning into mush. Add salt, pepper to taste and a little vinegar. As well as hot pepper and capers. You can also add a crushed garlic clove. Mix the resulting mass and put it in a saucepan. We also send the previously postponed cubes of cucumber and pepper there. Beautifully cut: green onions, basil – cubes and put everything in our gazpacho. Pour in a little vegetable oil, stir and put in the refrigerator.
Our invigorating summer meal is ready. All that's left is to pour it on plates.
