Ear with Cream or milk remains a favorite in Finnish cuisine. From the translation into Russian, the word "lohi" means "salmon". Lohikeitto is a noble variation of Finnish soup, in which cream is added.

Remove the gills from the salmon's head, wash it, put it to cook over medium heat.

As soon as the soup boils, remove the foam, lower the onion and one potato into the soup. Five minutes later - lavrushka and peppercorns. Cook over medium heat for 20 minutes. We remove the potatoes, filter the broth.

Mash potatoes with a potato masher, add mashed potatoes to the broth. Fry in the drain.butter leeks, sliced into circles. Put the celery.

Add carrot strips to the broth, fried onions, raw potatoes in cubes. cook for 15 minutes.

Mix cream with flour, pour into boiling broth, mix everything.

We put the fish, cut into pieces, but do not bring it to a boil. Remove the bones from the fish head, put it in the soup.

Cover the soup with a lid, leave it for a day.
Served with fresh dill, black bread or Karelian wickets.
