Soak chickpeas overnight in salted water.
Wash the soaked chickpeas, pour fresh water and put them on a small fire and with the lid closed.
Pour vegetable oil into the cauldron and fry the meat.
Add finely chopped onion, grated carrot, diced quince to the meat.
Pour soy sauce, grape vinegar, add bell pepper.
Put a whole hot pepper and a washed garlic head on the vegetables.
Put everything out.
An hour after boiling, the chickpeas are almost ready.
Put it in a cauldron together with the water in which it was cooked, while removing the pepper and garlic. Lay them out again from the very top of the cauldron.
Put the coarsely chopped cabbage, tomatoes cut into rings on it, and medium-sized potatoes on top.
And again we put pepper and garlic on top.
Sprinkle with seasonings and simmer until the cabbage is ready.
