Wonderful and very nutritious soup. Have you tried noodles with mushrooms? I can suggest a culinary recipe for homemade noodles, which is incomparably tastier than the purchased one. I learned this recipe in the village, I'm sorry – I was visiting, and there was a wake in the neighbors, so they called me. In the village, everything is much easier with this, they commemorate the whole village, they do not skimp on expenses. And it's easier somehow. First of all, we knead a steep dough from flour, eggs, salt and water, like on dumplings, even steeper. We roll it out into a thin layer (almost as thick as paper) and cut it into noodles with a knife. Here you can apply imagination and cut thinly or thickly, longer or shorter, as anyone likes. The chopped noodles are dried, covered with a towel.
Soak the mushrooms for an hour and a half. Boil in the same water. Decant the broth, cool the mushrooms and cut into strips. Chopped onions and grated carrots are fried in vegetable oil, add mushrooms. Put toasted vegetables with mushrooms in boiling salted water, let it boil, lay homemade noodles. Cook for a short time – it will go limp. Serve with sour cream.
By the way – the dish is lean, very good during lent, naturally without sour cream.
