Shred cabbage, grate carrots on a large cheese, mix, but do not crumple! Pour vegetable oil into the pan, put it on the fire. Put the finely chopped onion, fry it until transparent. Spread the carrots with cabbage and fry until the golden edges of the cabbage (on high heat), about five minutes. First we let the cabbage cool down, only then we salt it. Add (optional) boiled eggs to the finished filling.
Making the second filling. Cut the apples into small cubes, add water and granulated sugar, mix. Simmer for five minutes on low heat, do not forget to stir. Let the filling cool down, if desired, add nuts, raisins or cinnamon.
Now let's do the test. In a deep bowl, pour soda, salt and cold kefir, stir. Leave for a couple of minutes, until the foam appears. Pour in the sifted flour, knead the dough, it will turn out soft. We spread it on a surface sprinkled with flour. Divide into 6 parts. Roll each piece into a ball, flatten and roll out into a square, 3-5 mm thick, like a dumpling. Divide each filling into three parts. Put cabbage filling on 3 squares in the middle, and apple filling on the remaining 3. Pinch the pies in the form of an envelope.

Fry in vegetable oil until cooked on both sides.

You can, if desired, bake pies in the oven. To do this: cover the baking sheet with foil or parchment, spread the pies, lubricate them with drinking water with a special pastry brush. Preheat the oven to 220 degrees, bake the pies for 15 minutes, then reduce the temperature to 200 degrees and bake for another 15 minutes, until golden brown. Grease the finished pies with butter or vegetable oil, put them one on top of the other, cover with parchment or foil, so that they are soaked with steam and become softer. After that, they can be safely served to the table. Enjoy your meal!
