But it should be elongated and large enough - such potatoes will be easier to cut with a long thin straw. The oil can be any vegetable: olive, corn, and rapeseed oil are suitable. But it must be refined, odorless. Otherwise, the oil will burn. We don't need that at all.

    Peel the potatoes. Try to cut the skin very thinly. If you can't do it with a knife, you can use a vegetable peeler - it cuts the skin very thinly.

    Cut potatoes into long thin strips 5-7 mm thick.

    Soak the peeled potatoes in cold water for 10 minutes. Then drain the water and rinse the potatoes with a sieve until the water becomes transparent. So you will wash off the excess starch from the potatoes - it gives softness to the potatoes, and we need crispy potatoes on the contrary.

    Then dry the sliced potatoes well. You can use paper towels or dry it naturally. Keep in mind that if even a drop of water gets into the boiling oil during cooking, there will be a lot of splashes.

    Heat the oil well in a frying pan with a thick bottom. To prevent the oil from splashing, you can add a pinch of salt to it - the salt will absorb moisture, if there is any.

    Cook the French fries until golden brown and the potatoes are fully cooked. It took me about 12-15 minutes.
