According to this culinary recipe, you can cook one portion of an excellent Tatar dish from Tatar cuisine. To do this, beef or horse meat freed from bones, as well as lamb brisket, is cleaned of excess fat and films and cut so that a thin layer of 2 cm is obtained. Then we salt the layer, pepper it, sprinkle 2-3 drops of vinegar and put it in the refrigerator for a while. Next, take the meat out of the refrigerator, add a little salt and pepper again, and sprinkle with crushed garlic, then rub it well. The meat prepared in this way is wrapped in the form of a roll, tied with twine, like a sausage, and fried in a frying pan until half-cooked. Next, put the meat in a deep bowl, add the broth and chopped onions, peeled and grated carrots, a few pieces of bay leaf, cover with a lid and simmer until tender for about half an hour.
We serve this food from Tatar cuisine, preferably in a chilled form. Kalzha is ready! Add chopped greens, and serve with bread. Bon appetit!
