It is better to pour milk on the bread immediately so that it swells. Fresh greens - dill, can be replaced with parsley or make a mixture. Spices can be added if desired, others to taste.

    First of all, the fish needs to be defrosted. This can be done by leaving the fish to defrost on their own, or you can use a microwave oven. But in both cases, it is better to defrost the fish not completely - so it will be easier to carve it. Wash the defrosted fish, remove the head, tail and fins. Mill the fish, removing all the bones from it. Some pass fillets with bones through a meat grinder, and then only remove the bones. I chop fish without bones.

    Peel and cut onion into quarters. Squeeze the white bread lightly. The prepared fish fillet is passed through a meat grinder with onions and white bread.

    Add the broken raw egg, salt and pepper to taste, chopped fresh dill greens to the dishes to the chopped fish. Mix everything thoroughly until a homogeneous mass is obtained. Some add mayonnaise to the minced fish for juiciness, but looking ahead, I will say that the cutlets are very juicy even without mayonnaise.

    With wet hands, form minced fish cutlets. You can fry the cutlets just like that, you can roll them in flour or breadcrumbs before frying. I rolled my cutlets in breadcrumbs.

    Heat the frying pan, pour a little vegetable oil and put the prepared cutlets. On medium heat, fry the cutlets first on one side until golden brown, then turn each cutlet over and fry on the other side until golden brown.

    Ready-made fish cutlets to serve hot. Boiled rice, mashed potatoes or vegetables are suitable as a side dish for such cutlets. The dish is suitable for children.

I suggest the option of cooking fish cutlets fried in a frying pan. You can also cook such cutlets completely in the oven, or you can first fry them on both sides, put them on a baking sheet, smear with sour cream and bake.
