Favorite dish of autumn. Satisfying and amazingly delicious. Ease of preparation Our family is very fond of fried potatoes with eggplant. To my taste, the dish is very similar to potatoes with mushrooms.

    Preheat the frying pan, pour vegetable oil and spread the potatoes. Again, potatoes can be fried in two ways: under the lid or without it on high heat. I prefer the uncovered option. In this case, the potatoes turn out to be more crispy and toasted. Under the lid, it looks more like boiled and stewed, which I don't like at all. Salt, add spices.

    Mix potatoes and eggplants. Towards the end of cooking, add spices and salt. If desired, you can add chopped garlic.
