Eggplant in spicy sauce

fast, simple and mind-bogglingly delicious. I tried it once and now I will never forget it. Everything seems to be simple, fast, but the spicy marinade adds a special zest to this dish. Try to cook eggplants according to this recipe, and you will understand what I'm talking about;)

    I wash the eggplants, peel and cut each lengthwise into 8 parts. I had eggplants of a small size, so I cut them just lengthwise. Big and long, of course, it's better to cut them across if you don't want them to look like spaghetti :)

    I put them in a colander, salt, mix and leave for 20 minutes so that the eggplant juice is released and all the bitterness is gone.

    That's the amount of liquid I got! At the end, the eggplants can be squeezed out slightly.

    Fry in vegetable oil on each side until cooked and spread on paper towels so that they absorb excess fat. At this stage, I lightly pepper.

    Prepare the sauce. Honey was slightly heated in the microwave to make it easier to work with. To it I add 3 teaspoons of lemon juice, salt to taste.

    Squeeze out the garlic. I'm trying. Everything is already optional here. You may want more acid, or vice versa sweets. Here, as they say, there are no comrades for the taste and color...":) you can add more soy sauce, for example!! For me, the proportions that I gave were perfect.

    I transfer the eggplants to the dish on which I will serve, pour the sauce on top, sprinkle with herbs. Don't worry, the lower layers will also be well marinated. And it is advisable to leave for 20 minutes, so that all tastes are well combined with each other. Bon appetit!!

A very successful combination of eggplant with a marinade of lemon juice, honey and garlic. And the next day, these eggplants are even tastier.
It's just a pity that the eggplant season is coming to an end soon and we'll have to wait for the next season. I really love eggplants and I'm ready to eat them every day!!!
In general, in this recipe, the sauce can be made absolutely by eye and adjust the acid of lemon or the sweetness of honey. Soy sauce will also fit very well into this marinade.
