Pork with gooseberries

Creamy sauce and sour gooseberries go well with meat. I wanted to cook a dish according to this recipe 3 years ago, when I saw it in a culinary magazine. But all the previous years I only had enough gooseberries for 1-2 recipes, mostly it was baking or dessert. This year, a small bush in the country gave an unimaginable harvest. There was so much of it that I still have berries for new interesting dishes, although I have already prepared everything that I planned for this year.

    Prepare the ingredients. To prepare pork with gooseberries baked in the oven, we will need: pork pulp (it may be a tenderloin, goulash or neck part), flour for breading, vegetable oil for frying, ground black pepper and salt.

    Wash the pork, dry it and cut it into chunks or slices (I already have portions of the neck). Cut off excess fat.

    Season pork with salt and pepper.

    Roll each piece in flour.

    Heat the vegetable oil in a frying pan and fry the pork over high heat for 4 minutes on each side. Cover the pan with a lid and remove from the heat. This is necessary so that the pork does not dry out while the sauce is being prepared.

    Sauce. To prepare the gooseberry sauce, we will need: gooseberries, cream (20% fat content), water, sugar, ground black pepper and salt.

    Wash the gooseberries, sort them, remove the tails and dry them.

    Put the berries in a saucepan.

    Add sugar, pour in water. Stirring, bring to a boil and cook over medium heat for another 5 minutes.

    Pour in the cream. Simmer the sauce for another 3 minutes. At the end, season the sauce with pepper and salt.

    Put pork in a baking dish. Pour berry cream sauce. You can leave a little sauce to serve the finished dish.

    Bake pork with gooseberries in preheated to 200°In the oven for about 30 minutes.
