If you want to add variety to family breakfasts and are tired of the usual scrambled eggs, menemen will be a good way to do it. Eggs can be left whole, or you can pre-beat with a fork or whisk. But, as a rule, if menemen is prepared for several people, it is more convenient to serve it with whole eggs, dividing it into portions.

The three main products in this dish are eggs, tomatoes and bell peppers. Although the ingredients are simple, but in order for the dish to turn out very tasty, they must be of high quality. Good eggs with bright yolks, ideally homemade. And always fresh. Tomatoes are ripe, juicy and fragrant. You can use tomatoes in their own juice. Pepper is juicy, ripe, sweet. By the way, menemen is considered a spring-summer dish when tomatoes are especially delicious in Turkey.

Onions and garlic are put into this dish at will.

So, let's prepare the products and you can start cooking:

- remove the husk from the onion and cut it into small cubes or halves / quarters of rings;

- mine, cut out the stems, clean the seeds from the peppers, then cut them into small pieces;

- if tomatoes are fresh, wash them and cut them into pieces (canned ones are also cut into several parts);

- peel the garlic and finely chop the cloves with a knife;

- wash, dry and chop green onions - 2 thirds will go to cooking and 1 third to decorate the finished dish;

- thoroughly wash and dry the chicken eggs.

We put a cast-iron frying pan on medium heat, pour olive oil into it and heat it well. Add the chopped onion, fry for a couple of minutes - until soft. Next, put the Bulgarian pepper. Cook everything together, stirring, until the vegetables are ready. Next, add garlic, and after 5-10 seconds tomatoes and green onions. Over moderate heat, cook everything together for 20 minutes, stirring frequently. The sauce should thicken. In the process, sprinkle with salt.

Next, we use a spoon to make recesses for eggs and break them into holes. On low heat, cook the menemen for 8-10 minutes. If you like the baked yolks, cook longer. We also help the proteins to bake with a spoon. Sprinkle the menemen with ground black pepper.

The dish is ready. It remains to sprinkle it with the remains of green onions and garnish with fresh mint.
