1. Generously rub the entrecotes with salt and pepper on both sides.
2. Heat a frying pan with a thick bottom on the fire, add half the oil and reduce the heat to medium.
3. Add the meat to the heated oil and fry for 3 minutes on both sides.
4. Next, we extract the meat and send finely chopped shallots into the pan. We'll pass it for one minute.
5. Pour in the wine and beef broth, cook until the liquid is reduced to half.
6. Add the rest of the oil, let it melt.
7. To serve on the table, cut the entrecotes into cubes, pour the sauce and decorate with fresh parsley.
